Rosemary is the dried leaves of the evergreen Rosmarinus Officinalis. The slender, slightly curved leaves are grayish-green in color; resembling miniature pine needles.
Rosemary is one of the more potent herbs so it should be used with restraint for best effect. It can overwhelm food if used in quantity. It has a special affinity with lamb and it is compatible with and mixes well with many other spices. It also blends well with garlic and wine, making it an excellent addition to marinades for grilled meats.
